We have been looking like crazy for a schochet so that we can buy a local grass-fed cow and have it slaughtered. I even have my Rabbi in on the search, although so far he's got nothing. He is willing to help set up a co-op of sorts if ever we find some to schect the beast! :-)

We're in Connecticut, and kosher meat is the bane of my efforts. I was willing to buy in bulk from Wise Organics, even drive to PA to get the stuff, but they don't have much of a beef thing going yet.

If you have any other ideas, I'd love to hear them. Right now we've gone to buying Wise Organic beef when we can find it, and eating mostly vegetarian the rest of the time. And I know that Wise Organic is a sell out, but no one here is willing to give up beef altogether.

I love the blog, and my husbnad was so thrilled to find out I wasn't the only Jewish environmentalist woman out there!

Homebrewlibrarian, I would suspect that you might be best served by building a relationship with someone who hunts, or, if it doesn't conflict with your principles, learning to hunt or subsistence fish yourself. I don't know what options there are around Anchorage itself, but I would imagine that there are people hunting in the region who might be willing to sell you the bits they don't want for your cats, and who might teach you to hunt and/or fish and dry it during the summer. I don't know if cats can live on dried salmon, but I believe that's what most racing dogs ate, to a large degree, so it might be possible.

Samantha, it takes a little experimentation to substitute liquid sweeteners. I usually start with about half as much honey as sugar and reduce the liquids a tiny bit when I sub, but some people use a 2/3 or 3/4 ratio. Honey and maple syrup both taste very sweet to me, so I use less - plus, I'm trying to cut back on sweet stuff. Generally speaking, honey or maple syrup will make your baked goods a bit softer and last longer, which is good. You can also use maple sugar, the residue after the syrup is sugared off, and I use that about equal with regular sugar. It does have a noticeable maple flavor, which can be overpowering with delicate tastes - I don't like it in, say, chai.

Patty, I am thinking about a tea bush myself, and I've been experimenting with betony, which tastes a lot like tea. But I'm jealous, of course ;-)

Susan, I do forage for some greens, wild onions, morels and a few other things. I'm a mushroom wuss so far, but I'm trying to expand. Mostly I do it on my own property, though, and am still figuring out what we have.

Bythebay, we schecht our own poultry - we were taught by an Orthodox friend, but girl schochets, not to mention imperfectly righteous ones cannot sell poultry as kosher, so when we were selling chickens, we had them done by a schochet who summers nearby. There's also a kosher butcher near Albany, who does a lamb for us once in a while. But we've pretty much had to hunt up our own sources. There used to be a farm up in Washington County that was kosher organic and hallal - I'll see if I can find info about them for you. And if you want, you can email me in the spring when I'm planning the poultry thing - I can probably raise some chicken for you if you can pick it up. I can send it out to be processed if I have enough of them. I just haven't raised enough the last two years to bother. And thanks so much for the butter link!

CA - I think it will be a long, slow process of realizing quite what our environmental crisis means. And one of the things I fear most is that people won't put it together.

BTW, I just read about blackouts in LA this weekend due to extreme heat - and 16 people died as well. A columnist on Huffington Post is bitching about the outages, angry that the power company didn't keep the lights on.
